My boat partner is the head chef at Tsunami Sushi in Sunset Beach. We got some and he showed me how to clean and cook them without the pounding ritual. Clean the squid and prepare the steaks as normal. When you have the steak prepared, take a nice fillet knife and trim 1/4 inch off the top and off the bottom of the steak, this will leave you with the most tender part of the meat the middle of the steak. You can marinade and grill this part or season, flour and egg wash then fry tempura style with soy and lemon in a pan. Both options are fantastic. Or you could season and panko the whole steak. All are good options.
